Medjool Date Poppers



  • 8 Large Medjool Dates, pitted
  • 1 cup Pork chorizo
  • 1 cup Cream cheese
  • 1/4 cup Cooked chopped bacon
  • 1/2 Tbsp Minced garlic
  • 1/2 Tbsp Minced shallots
  • 1 oz Vegetable oil
  • 3 cups Corn Oil
  • 1 1/2 cups All purpose flour
  • 1 Tbsp Baking powder
  • 8 oz Soda water
  • 1 egg

Cooking Instructions

  1. In a sauté pan over med heat sweat garlic and shallots in vegetable oil. Add chorizo and cook through. Allow chorizo mixture to cool and combine with bacon and cream cheese. Stuff Medjool dates with mixture and then place n refrigerator to chill
  2. Add corn oil to a deep pot and heat over med-high heat to about 275 degrees. Remove Medjool date poppers from the refrigerator, dip in batter and deep fry until golden brown.
  3. Batter for Poppers: In a large bowl, combine all purpose flour and baking powder. Add egg and soda water and mix until combined and there are no lumps. Do not over mix.

Serve immediately.
