Medjool Date and Bibb Lettuce Salad

Ingredients:

2 cups Natural Delights Medjool dates, pitted and chopped

1 head bibb or Boston lettuce, cleaned and leaves separated

½ lb green beans, boiled till tender then chilled

¾ cups cherry tomatoes, cut in half

½ medium red onion, sliced thin

½ cup roasted red peppers, chopped

½ cup Greek yogurt

¼ cup Natural Delights Medjool dates, pitted and chopped

½ cup olive oil

1 oz orange juice

1 Tbsp Dijon mustard

 

Preparation:

FOR THE DRESSING

  1. Place all the yogurt, olive oil, orange juice, Dijon mustard, ¼-cup chopped Medjool dates and a pinch of salt in a blender and process until the Medjool dates are finely chopped. Set aside.

FOR THE SALAD

  1. Place bibb lettuce leaves around the bottom of 4 salad bowls.

  2. Mix all other salad ingredients and ½-cup dressing in a mixing bowl and season to taste.

  3. Divide Medjool date salad evenly atop the lettuce leaves.
