Medjool Date and Bibb Lettuce Salad

  • 1/2 cup plain Greek yogurt
  • 1/2 cup olive oil
  • 1/4 cup Natural Delights Medjool Dates, pitted and chopped
  • 2 tbsp. orange juice
  • 1 tbsp. Dijon mustard
  • Pinch salt


  • 2 cups Natural Delights Medjool Dates, pitted and chopped
  • 1 head bibb or Boston lettuce, cleaned and leaves separated
  • 1/2 lb. green beans, boiled until tender and chilled
  • 3/4 cup halved cherry tomatoes
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup roasted red peppers, chopped
  • Salt to taste


  1. Puree all dressing ingredients in a small blender or food processor until dates are finely chopped.
  2. Place lettuce leaves around the bottom of 4 salad bowls. Stir together remaining salad ingredients and 1/2 cup dressing in a large bowl and season with salt. Place equal amounts into each lettuce-lined bowl.
