Medjool Date Bites

Ingredients

  • 2 cups Natural Delights Medjool dates
  • 1 large Red Apple, Jonagold, Honeycrisp, Braeburn. 
  • Juice of ½ Lemon
  • 4 oz. semi hard cheese such as, Manchego or Gruyere, sliced.
  • 3 oz. Prosciutto, thinly sliced, cut into 2inch pieces
  • 1 cup Arugula leaves

Preparation

  1. Using a small knife cut a slice in one half of the date lengthwise. Discard pits.
  2. Core and quarter apples. Slice each quarter into thin slices. Sprinkle with lemon juice.
  3. Fill each date with a torn half or third piece of sliced cheese and a sprig of arugula.
  4. Wrap date with a small piece of prosciutto. Place on an apple slice. 
  5. Arrange on a serving platter. Top with cracked black pepper if desired.
