Hearty Winter Squash with Chewy Medjool Dates and Slivered Almonds

 

Ingredients

  • 1/3 Cup Toasted slivered almonds
  • 1 Butternut or another winter squash, halved lengthwise and seeded
  • 2 tsp Butter
  • Salt and black pepper
  • 1 Shallot, minced
  • 2 tsp Brown sugar
  • 1 tsp Orange juice
  • 1/4 tsp Orange zest
  • 1/4 tsp Ground allspice
  • 1 cup Medjool dates, pitted and chopped
  • 2 tsp Fresh parsley, chopped

Cooking Instructions

  1. Preheat oven to 400 degrees F.
  2. Meanwhile, in a heavy, ungreased saucepan, stir almonds over medium heat until golden brown. Remove from heat.
  3. When oven temperature has been reached, place butternut squash halves on a baking sheet with the flesh side up. Place 1 teaspoon of butter into the center of each squash and season with salt and black pepper. Roast for 25 minutes, until the flesh is fork-tender. Remove from the oven and let cool. Scoop out the cooked flesh and set aside.
  4. To a large pan over medium heat, add shallots and 1 tablespoon of butter. Sauté until shallots begin to caramelize. Add brown sugar, orange juice, orange zest and ground allspice. Add the cooked squash and puree or mix by hand, depending on the desired consistency. Add the dates and heat for another minute. Remove from the heat and stir in the almonds and parsley. Add more salt and pepper, if desired.

Serve immediately.
