Rice with Lentils and Medjool Dates

 

Ingredients

  • 1/2 cup Pitted, chopped Medjool dates
  • 1 Tbsp Vegetable oil
  • 1 Medium onion, chopped
  • 2 cups Chicken broth
  • 1 cup Dried lentils
  • 1/2 cup Long grain white rice
  • 1/2 cup Diced red peppers
  • 1/2 cup Diced carrots
  • 2 Cloves garlic, minced
  • 1/2 tsp Grated lemon peel
  • 1/2 tsp Ground cumin
  • 1/2 tsp Curry powder
  • 1 Tbsp Chopped parsley

Cooking Instructions

  1. Heat oil in a heavy bottom saucepan.
  2. Add onions and cook over medium heat, stirring frequently, until onions are golden brown, about 15 minutes.
  3. Stir in remaining ingredients, except parsley. Bring to a boil; cover and simmer another 25 -30 minutes, stirring occasionally until the rice and lentils are tender.
  4. Sprinkle with parsley and serve with sliced grilled meat of your choice.

Serve immediately.
