Apple Pie Stuffed Dates

These Apple Pie Stuffed Dates are the perfect sweet snack for Fall and come together with just 7 simple ingredients!

Ingredients

  • 12 Natural Delights Organic Pitted Medjool Dates
  • 1 green apple, peeled and diced
  • 1 tbsp organic coconut sugar, unrefined
  • 1 tsp ground cinnamon
  • 1/2 tbsp arrowroot flour
  • 1/2 cup filtered water
  • 2 tbsp pecans, chopped

Preparation

  1. Sauté diced green apple on stovetop over medium low heat with cinnamon, coconut sugar, and 1/4 cup of water for 5 minutes, stirring occasionally.
  2. Mix arrowroot flour with 1/4 cup of water in a small bowl and add to apple compote. This will thicken the mixture to look like apple pie filling! Set aside.
  3. Prepare your dates by slicing the tops. Remove the pit and arrange the dates on a plate.
  4. Fill each date with about 1 tbsp of apple pie filling, top with chopped pecans and enjoy! Store any leftovers in an airtight container in the refrigerator for up to one week.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
