A quick, healthy weeknight dinner that you can make ahead and eat all week.
Ingredients
- Salad:
- 2 T. of Sesame Oil
- 1 Small Yellow Onion, Sliced
- 3 Chicken Breasts, Sliced
- 1 tsp of Kosher Salt
- ¼ tsp of White Pepper
- 3 Cups of Your Favorite Stir Fry Mixed Vegetables
- ¼ Cup of Lightly Salted Cashews
- 1/4 Cup Natural Delights® Dates, Pitted and Roughly Chopped
- Sliced Green Onions for Garnish (Optional)
- Sauce:
- 1 T. of Rice Wine Vinegar
- 3 Tbsp of Smooth Peanut Butter (or nut butter of choice)
- 2 T. of Soy Sauce
- 2 T. of Date Paste
- 1 tsp. of Minced Garlic
- 2-3 T. Boiling Water
