Date Antipasto Wreath

A bit of fun to liven up the centre of any celebratory table, this festive wreath of sweet dates, seasonal fruit, cured meats and boccincini is simple to assemble and delicious to take apart! Perfect for the Chrissy table.

Ingredients

  • 12 Natural Delight Medjool Dates, halved, pit removed
  • 6 x Prosciutto thinly sliced
  • 12 x Wagy Braesola thinly sliced
  • Fresh orange, rind removed and sliced into rounds
  • Nectarine, halved and thinly sliced into crescents
  • ½ punnet blueberries
  • 200g baby boccincini, drained
  • Garnish
  • Micro herbs
  • ½ bunch basil
  • To Serve
  • Fresh bread
  • Breadsticks
  • Seed crackers

Preparation

1. On a large round platter, start your wreath by laying the half the cured meats around the edges in a circle.

2. Fill the blanks with half of the remaining ingredients.

3. Repeat until you have a generous and gorgeous looking wreath with evenly spaced pops of colour and ingredients.

4. Finish with the fresh basil.

Cooks Notes

1. Use and fresh fruit and cured meats you enjoy.

2. Swap boccincini with torn fresh mozarella if you wish

3. Dress with pesto for more pops of colour.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
