Date Peanut Sauce

You'll look forward to dinner when this Medjool Date Peanut Sauce is on the menu!

Ingredients

  • ½ cup Creamy Peanut Butter
  • 6 Dates, Pitted & Soaked
  • Juice of 1 Lime (small) 2 tsp.
  • 2 tsp. Soy Sauce
  • 2 medium Cloves Garlic, Minced
  • ¼ cup Rice Wine Vinegar (to loosen)
  • 1 tsp. Sriracha
  • 1 tsp. Minced Ginger

Preparation

  1. Blend in high-speed food processor or blend until silky smooth (adding water if needed).
  2. Transfer to airtight container or serve over salad or spring rolls, or stir fry.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
