Date, Pear and Ricotta Tart

This simple tart recipe, featuring delicious seasonal flavors, can be prepared in minutes and enjoyed by afternoon tea time!

Ingredients

  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 3 eggs
  • ¼ cup honey
  • 2 tablespoons olive oil
  • ½ cup ricotta
  • 10 Natural Delight Medjool Dates, pitted and halved
  • 1 pear, cored and sliced
  • Natural yoghurt or cream

Preparation

  1. Pre-heat oven to 180°C.
  2. Grease a fluted rectangular tart tin, approximately 10cm x 25cm.
  3. In a large bowl, stir together the almond flour and baking powder.
  4. In a separate bowl or jug, whisk together the eggs, honey, oil and ricotta.
  5. Pour wet ingredients into dry ingredients and stir together until well mixed.
  6. Pour into prepared tray and top with pear slices and date halves.
  7. Bake for 18 - 20 minutes or until set.
  8. Serve with yoghurt or cream.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
