Date Shamrock Shake

This shake is free of artificial dyes and refined sugars, only sweetened with Medjool dates. So quick and easy to whip up with ingredients you probably already have at home!

Ingredients

  • 2-3 organic Medjool dates, pitted
  • 1 cup fresh spinach
  • 1 frozen banana, chopped
  • 1 cup milk
  • 1/4 cup Greek yogurt (or dairy-free yogurt)
  • 1 tablespoon nut butter
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon peppermint extract
  • Whipped Topping
  • 1 cup organic whipping cream
  • 2-3 Tbsp pure maple syrup
  • 2 tsp vanilla extract

Preparation

  1. In a high-speed blender, add the dates, frozen banana, spinach, milk, Greek yogurt, nut butter, vanilla and peppermint extract.
  2. Blend on high until the mixture is smooth and creamy.
  3. Optional whipped topping: Place whipping cream, maple syrup, and vanilla extract in a bowl. Using a hand mixer, mix on medium/high speed for 3-4 min until it thickens. Top smoothie with whipped cream and store any leftovers in the fridge!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
