Dubai Chocolate Date Bark

Indulge in the rich taste of Dubai with our Chocolate Date Bark — luscious dates layered with premium chocolate, pistachio butter and kataifi.

Ingredients

  • 1 cup Natural Delights Pitted Medjool Dates (about 15-20)
  • 1 cup pistachio butter
  • ¼ cup finely chopped pistachios
  • ½ cup shredded phyllo dough (kataifi), lightly toasted
  • 4 oz (about ½ cup) dark chocolate, roughly chopped
  • 1 tablespoon coconut oil
  • Pinch of flaky sea salt

Preparation

  1. Line a small baking sheet or dish (around 8x8 inches) with parchment paper. Open each pitted date slightly and arrange them closely together on the parchment paper, slightly overlapping if needed to form a relatively even layer.
  2. Place another piece of parchment paper on top of the dates. Use a rolling pin or the flat bottom of a glass to gently press down on the dates, flattening them into a cohesive layer.
  3. In a small bowl, combine the pistachio butter with the lightly toasted kataifi. Stir well until the kataifi is evenly distributed throughout the pistachio butter.
  4. Spread the pistachio butter and kataifi mixture evenly over the flattened date layer, leaving a little space at the edges if desired.
  5. In a heatproof bowl, melt the dark chocolate using a double boiler or in the microwave in30-second intervals, stirring well after each interval until smooth. If using, stir in the coconut oil for a smoother consistency.
  6. Pour the melted chocolate evenly over the kataifi and pistachio layers, spreading it to cover the surface.
  7. Sprinkle a pinch of flaky sea salt and pistachios over the melted chocolate for an extra flavor dimension.
  8. Transfer the baking sheet to the refrigerator and let it chill for at least 30 minutes, or until the chocolate is firm.
  9. Once the bark is firm, remove it from the refrigerator and break it into irregular pieces or cut it into squares using a sharp knife.
  10. Enjoy immediately or store in an airtight container in the refrigerator for up to a week.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
