- 12 carrots, cleaned & halved lengthwise
- 3 tablespoons olive oil
- 2 teaspoon seasoned pepper
- 1 cup Medjool dates, chopped
- 1/2 cup of pistachios, shelled & chopped
- 1/3 cup blue cheese crumbles
- Optional: fresh parsley for garnish
