Ingredients

  • 2 pineapples, rind removed, cored, and sliced into ½ inch thick slices
  • ½ cup Medjool Date Strips with Tajín®, coarsely chopped
  • 1/3 cup crumbled feta cheese
  • ¼ cup fresh cilantro, chopped
  • 2 tablespoons olive oil

Preparation

  1. In a medium bowl, combine the Medjool Date Strips with Tajín®, feta cheese, cilantro, and olive oil. Set aside.
  2. Heat a grill pan over medium-high heat or use an outdoor grill. Brush the pineapple slices with oil and place them on the grill. Let them cook for about 1 minute on each side, or until they get a good char.
  3. To serve, transfer the grilled pineapples to a serving dish and top with the feta and date mixture. Enjoy!
