Hamentaschen Cookies

Ingredients

  • 2½ cups almond flour
  • ¼ cup cold unsalted butter, diced into cubes
  • Pinch of salt
  • 1 egg
  • Medjool Date Filling
  • 2 cups pitted Natural Delights Medjool dates, chopped
  • 1½ cups water
  • ¼ cup brown sugar
  • 1 tsp. vanilla extract

Preparation

  1. In a blender or mixer, combine almond flour, butter, salt, and egg until a dough forms.
  2. Roll the dough between two sheets of parchment paper until it's about ¼ inch thick.
  3. Cut out circles at your desired size using a biscuit cutter, cup, or knife.
  4. Cook your Medjool dates and brown sugar in 1 and ½ cups of water on medium heat for 20 minutes. Once the water is absorbed, add the vanilla extract and let it cool.
  5. Place ½ teaspoon of Medjool date spread onto each dough circle, then fold into triangle shapes, pinching the edges securely.
  6. Arrange the hamentaschen on a parchment-lined baking pan and freeze for 30 minutes to help them hold their shape.
  7. Preheat the oven to 325F and bake for 11-12 minutes per batch, until lightly golden.
  8. Let them cool before serving, then enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
