Heart Shaped Donuts

Say hello to your new favorite Valentine's Day treat!  These Heart Shaped Donuts are sweetened with dates, offering a soft, wholesome treat with a rich, caramel-like sweetness.

Ingredients

  • 3 cups Bob's Red Mill Organic Flour
  • 1 ¼ cups milk
  • 1 cup Natural Delights Pitted Medjool Dates
  • 2 eggs
  • ½ cup sugar
  • ½ cup boiling water
  • ⅓ cup melted butter
  • 1 tbsp baking powder
  • 1 tbsp vanilla extract
  • 1 tsp salt
  • For the Icing
  • 2 cups powdered sugar
  • ¼ cup milk
  • 1 tbsp vanilla extract
  • Pink gel food coloring
  • Assorted sprinkles

Preparation

  1. Preheat oven to 400°F (200°C). Grease a donut pan.
  2. Soak pitted dates in boiling water for 10-15 minutes. Drain and chop into a paste.
  3. Whisk flour, sugar, baking powder, and salt in one bowl. Whisk date paste, eggs, milk, melted butter, and vanilla in another. Combine wet and dry ingredients, whisking until just combined. Don't overmix.
  4. Transfer batter to a piping bag (or Ziplock with corner snipped). Pipe into the donut pan, filling cavities ¾ full. Bake for 10 minutes, or until a toothpick comes out clean. Watch closely!
  5. Remove donuts and cool completely on a rack.
  6. Whisk icing sugar, milk, vanilla and food coloring until smooth. Add milk 1 tbsp at a time if needed.
  7. Dip cooled donut tops in icing, letting excess drip. Sprinkle immediately. Decorate as desired!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
