Homemade Cookie Dough "Larabars" are a healthy, no-bake snack bar made with just a few simple ingredients like Cacao Pecan Mini Medjools, nuts, and chocolate chips. They capture the delicious flavor of cookie dough while being naturally sweetened. Perfect for a quick, energizing treat!

Ingredients

  • 2 ½ cups Natural Delights Cacao Pecan Mini Medjools
  • ½ cup almonds, cashews or peanuts
  • ½ cup chocolate chips
  • ¼ teaspoon vanilla extract
  • Pinch of salt

Preparation

  1. Line a baking dish with parchment paper, leaving overhang for easy removal.
  2. In a food processor, combine the Natural Delights Cacao Pecan Mini Medjools, choice of nuts and vanilla extract. Process until smooth and sticky.
  3. Stir in chocolate chips and salt.
  4. Transfer the mixture to the prepared baking dish and press evenly into the bottom.
  5. Refrigerate for at least 1 hour to firm up.
  6. Cut into desired bar sizes and enjoy!
