Mediterranean Date Gelato

A quick but impressive dessert to healthily satisfy those late-night cravings or wow guests at a dinner party.  We’ve made this trend our own with the addition of zesty orange, warming cinnamon and salted pistachio.  One taste and you’re sure to be in gelato heaven.

Ingredients

  • 4 tablespoons good quality extra virgin olive oil
  • 10 Medjool dates, pitted and halved
  • 4 generous scoops of vanilla ice cream
  • 1 orange, freshly zested
  • 1 cinnamon quill
  • ½ cup pistachios, finely chopped
  • Sea salt, for sprinkling

Preparation

1. In a small pan, gently heat the olive oil together with the cinnamon and orange to infuse the flavours (2 minutes). Add dates and cook for 1 to 2 minutes on one side, before flipping and searing on the other side. Remove dates from heat and reserve olive oil.

2. Scoop the ice cream into bowls, top with caramelised dates and a drizzle of reserved olive oil and orange zest.

3. Top with crushed pistachios and a sprinkle of sea salt.

Cook's Notes

Olive oil is rich in antioxidants and known to have anti-inflammatory properties.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
