Medjool Date and Apple Sandwiches

Medjool Date and Apple Sandwiches


  • 2 apples (Honeycrisp, Jazz, or Fuji are our favorites)
  • 1 tsp. lemon juice
  • ½ cup almond or peanut butter
  • 6 to 8 Medjool dates, pitted & sliced into quarters
  • Optional Toppings: Granola, finely chopped nuts, coconut to sprinkle


  1. Slice apples across into ½ inch slices. 
  2. Scoop out core with melon baller. 
  3. Brush slices with lemon juice. 
  4. Spread one side of each slice with nut butter. 
  5. Arrange sliced Medjool dates on nut butter. 
  6. Sprinkle with any desired crumbly additions. 
  7. Top with matching apple slice.

Enjoy immediately or wrap for a healthy and delicious on-the go snack.
