Medjool Date Raw Energy Bars


  • 2 cups Natural Delights Medjool Dates, pitted and chopped (about 20 dates)
  • 2 cups raw cashew nuts
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup natural almonds
  • Pinch sea salt
  • 1/2 cup unsweetened shredded coconut
  • 2 tbsp. vanilla extract
  • 3 tbsp. cold water


  1.  Place dates, cashews, cocoa powder, almonds and sea salt in a food processor. Pulse until coarsely chopped.
  2. Add coconut and extract; pulse again adding water a little at a time until mixture makes a moist but not sticky dough.
  3. Press firmly into a 9-inch square baking dish. Chill for 1 hour before serving.
