Place the peanut butter, dates, vanilla, and salt in a food processor. Blitz until smooth and spreadable. Add a bit of canola oil, if necessary, to loosen the mixture slightly.
Spread the mixture over 5 pieces of bread. Top with the remaining 5 pieces of bread. For best results, chill in the freezer for at least 20 minutes.
Cut 2 star shapes from each of the sandwiches with a cookie cutter.
