Peppermint Stuffed Dates

Ingredients

  • 12 Natural Delights® Pitted Medjool Dates
  • 1 14-ounce can coconut cream or full-fat coconut milk
  • 1 ½ cups dairy-free dark chocolate
  • ¼ tsp pure peppermint extract
  • Chocolate for drizzling
  • Crushed peppermint for garnish
  • Flakey sea salt for garnish

Preparation

  1. Gently melt chocolate in 30-second intervals in the microwave, or in a double boiler over low heat, stirring frequently.
  2. In a medium bowl, whisk together melted chocolate and coconut cream until smooth. Stir in peppermint oil.
  3. Cover and refrigerate for at least 4 hours, or until the mixture is firm enough that it no longer sloshes when the bowl is tilted.
  4. Mix the chilled mixture with a hand mixer until light and fluffy, scraping down the sides as needed.
  5. Transfer the mousse to a piping bag with a small tip, or a resealable plastic bag with a corner snipped off.
  6. Chill for an additional 30 minutes to further firm up the mousse (optional).
  7. Pipe the mousse into each date. Sprinkle with crushed peppermint and drizzle with chocolate.
  8. Enjoy immediately, or chill in the refrigerator for 30 minutes before serving.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
