Pistachio Chocolate Bar

Our pistachio chocolate bar is a delectable treat combining the smooth richness of Dolci Frutta chocolate with the nutty and sweet flavors of pistachios and dates.

Ingredients

  • 1 cup Natural Delights Medjool Dates, pitted
  • 2 12 oz Dolci Frutta Chocolate Wafers
  • 1 cup pistachio butter
  • ½ cup roasted pistachios
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • Pinch of salt

Preparation

  1. In a food processor, combine pitted dates, pistachios, pistachio butter, vanilla, water and salt. Pulse until the mixture forms a paste. You may need to scrape down the sides of the processor a few times. If the mixture is too dry, add a small amount of water, 1 teaspoon at a time, until it reaches the desired consistency.
  2. Melt the Dolci Frutta chocolate wafers according to package directions, stirring occasionally until smooth. Remove from heat and keep warm.
  3. Add melted chocolate to chocolate molds. Spoon the pistachio date filling into the mold pressing down lightly to compact.
  4. Gently pour melted chocolate over the filling, ensuring it completely covers the pistachio date mixture.
  5. Tap the molds gently on the counter to remove any air bubbles.
  6. Place the molds in the refrigerator for at least 30 minutes, or until the chocolate is completely set.
  7. Carefully remove the bars from the molds.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
