Pistachio Chocolate Date Bark

A deliciously indulgent treat featuring layers of rich chocolate, chewy dates, and crunchy Wonderful® Pistachios No Shells Unsalted, perfectly balanced for a sweet and nutty bite.

Ingredients

  • 20 Natural Delights Medjool Dates
  • 2 cups Wonderful® Pistachios No Shells Unsalted
  • 1 cup white chocolate
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil
  • Toppings
  • 1/2 cup Wonderful® Unsalted Pistachios, chopped
  • Flakey sea salt

Preparation

  1. Process the pistachios in a food processor for 20 minutes, or until a smooth, thin paste forms.
  2. While the pistachio paste is still warm, add melted white chocolate and process for 5 minutes until thoroughly combined. Transfer the pistachio butter to a jar and set aside.
  3. Line a baking sheet with parchment paper.
  4. Remove pits from the dates and arrange them on the prepared baking sheet, slightly overlapping, to create a solid base.
  5. Gently press the dates to ensure they form a cohesive foundation.
  6. Spread the pistachio butter evenly over the date base.
  7. Sprinkle a generous amount of chopped pistachios over the pistachio butter.
  8. In a microwave-safe bowl, melt dark chocolate and coconut oil until smooth.
  9. Drizzle the melted chocolate evenly over the date base.
  10. Sprinkle additional chopped pistachios and flaky sea salt over the melted chocolate.
  11. Refrigerate for at least 2 hours, or until the chocolate is firm.
  12. Cut into pieces and serve.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
