Protein Date Bars

These delicious Protein Date Bars are made with just a few wholesome ingredients and are naturally sweetened with Medjool dates and pure maple syrup!

Ingredients

  • 1.5 cups Natural Delights Medjool Dates, pitted
  • 1-2 tbsp pure maple syrup
  • 3/4 nut butter
  • 1 tsp pure vanilla extract
  • 1/8 tsp salt
  • 1 scoop chocolate protein powder
  • 1 cup organic rice puffs

Preparation

  1. Prepare your dates by removing the pits.
  2. Add dates, maple syrup, nut butter, vanilla extract, and salt to a food processor and process until nearly smooth.
  3. Add the protein powder and puff cereal, process until well combined.
  4. Line a loaf pan with unbleached parchment paper and press the mixture evenly and firmly into the pan. Chill in the refrigerator or freezer for 60 minutes to set.
  5. Use the overhanging liner to lift mixture onto a cutting board and cut into 9 bars.
  6. Enjoy immediately or place your date bars in an airtight container in the refrigerator for up to one week or in the freezer for up to 3 months.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
