Reindeer Stuffed Dates

Reindeer Dates are a super fun, festive, and healthy dessert that is a must for the holidays!

Ingredients

  • 8 Natural Delights Medjool Dates, pitted
  • 16 raw pecan halves, split in half
  • 2 tbsp creamy peanut butter
  • 8 raspberries
  • 1/2 cup chocolate chips
  • 16 white chocolate chips
  • 1/2 tbsp avocado oil

Preparation

  1. Prepare your dates by slicing the sides. Remove the pit and arrange dates on a plate.
  2. Fill each date with peanut butter and insert four pieces of pecans on the inside of the wide end of the date for antlers.
  3. Once all dates are assembled with antlers, melt chocolate chips with oil and coat the top of each date with chocolate. Add a raspberry (cut in half if it is a larger one) for a nose, two white chocolate chips for the eyes, and using a toothpick, create pupils using any leftover melted chocolate.
  4. Refrigerate for 30 minutes or until chocolate hardens. Store any leftovers in an airtight container in the refrigerator for up to one week.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
