Cupcake directions
1. Preheat oven to 350°.
2. In a large bowl, mix butter and sugar until fluffy, then beat in egg. Mix in chopped Medjool Dates.
3. In a separate bowl, whisk together flour, baking powder, salt, baking soda and all of the spices. Then gradually add this to creamed mixture.
4. Fill lined muffin pan cups three-fourths full and bake for 20-25 minutes.
Frosting Directions
1. Combine butter and cream cheese in a bowl and beat until creamy and lump-free.
2. Add in vanilla extract.
3. With mixer on low, gradually add powdered sugar until completely combined.
*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
