Spring Dessert Platter

This gluten free platter is super fast to pull together and perfect for spring entertaining. Simple, beautiful, and delicious! 

Ingredients

  • Sweet & Salty Almond Mini Medjools
  • Cacao Pecan Mini Medjools
  • Coconut Mini Medjools
  • Strawberries
  • Melon
  • Kiwi
  • Raspberries
  • Proscuitto

Preparation

  1. Start with a variety of Mini Medjools in ramekins or small bowls in the center
  2. Add a savory treat to balance the sweet! To save time, I used premade Prosciutto Panino (prosciutto-wrapped mozzarella sticks), purchased at the grocery store. But, you can also make your own of course!
  3. Place strawberries around the center ramekin.
  4. Add a special mini treat! I used my no bake carrot Cheesecake Bites (GF/DF) but you can also substitute any other homemade or store-bought bite-sized goodie.
  5. Fill in with fruit from the center out in ROYGBIV order: raspberries, cantaloupe, kiwi, and blackberries/blueberries.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
