Sweet Potato Goat Cheese Date Bites

A protein-packed sweet potato goat cheese date bite is a flavorful appetizer combining roasted sweet potato rounds topped with creamy goat cheese, crispy bacon, and sweet, chewy dates. This delicious bite-sized treat offers a balance of savory, sweet, and smoky flavors, with a hint of protein from the bacon, cottage cheese and goat cheese, making it a crowd-pleasing snack or party dish.

Ingredients

  • Sweet potatoes
  • 4 oz. goat cheese
  • 1/2 cup cottage cheese
  • 1 1/2 tbsp olive oil
  • Sea salt
  • 1 clove of garlic
  • Bacon
  • Medjool dates

Preparation

  1. Preheat your oven to 400F and cut your sweet potatoes into 1/2-inch slices. Lay each of them on a parchment-lined baking sheet and drizzle with olive oil, coating evenly. Sprinkle with sea salt and bake for 30 minutes, flipping halfway through.
  2. Make your high-protein goat cheese spread by adding the following to a food processor: 4 oz goat cheese, 1/2 cup cottage cheese, 1 1/2 tbsp olive oil and 1 garlic clove. Pulse until you get a smooth consistency.
  3. Once your sweet potatoes are cooked, let them cool and then spread each one with a little of the goat cheese spread. Top with crispy bacon and chopped Medjool dates. Then, they’re ready to serve & enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
