Sweet Potato Whipped Feta Dip

This sweet and savory dip comes together in less than 10 minutes, making it perfect for the busy holiday season. All you need are just a few simple ingredients, including sweet potatoes, feta, and Natural Delights Whole Medjool Dates.

Ingredients

  • 8 ounces crumbled feta cheese
  • 1 cup mashed sweet potatoes, skin removed
  • 1 Natural Delights Whole Medjool Date, pitted
  • 2 tablespoons water, or more if needed
  • Toppings
  • 5 Natural Delights Whole Medjool Dates, pitted & chopped
  • 1 teaspoon fresh rosemary, finely chopped
  • ¼ cup pecans, chopped
  • Serve With
  • Toasted bread slices
  • Your favorite crackers

Preparation

  1. Soak 1 Natural Delights Medjool Date in warm water for about 5 minutes.
  2. To make the topping, in a small bowl, combine the chopped dates, rosemary, and pecans. Set aside.
  3. To make the dip, add the mashed sweet potato, crumbled feta, the soaked date, and 2 tablespoons of water to a blender or food processor. Blend until the mixture is smooth and creamy. Depending on your blender or food processor, it might take a minute or two, or an additional tablespoon of water to reach the perfect consistency.
  4. Scoop the dip into a bowl and top it with the date mixtures. Garnish with additional crumbled feta and rosemary sprigs, if desired.
  5. Serve with toasted bread or your favorite crackers and enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
