Trail Mix Date Bark

Trail mix date bark is a sweet and crunchy snack made by combining Sweet and Salty Mini Medjools with dark chocolate and crunchy toppings. The bark offers a delicious combination of chewy, nutty, and fruity flavors in each bite. It's a wholesome and energy-boosting treat that's perfect for snacking.

Ingredients

  • 2 - 2 ½ cups Sweet & Salty Almond Mini Medjools (about 20-25)
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil
  • Pretzels, M&M’s, coconut (for topping - optional)
  • Flaky sea salt

Preparation

  1. Line an 8x8 inch baking dish with parchment paper.
  2. Place the Mini Medjools between two sheets of parchment paper. Using a rolling pin, roll the Mini Medjools out into a flat layer. Aim for a uniform rectangle that covers the entire baking dish.
  3. In a microwave-safe bowl, heat the chocolate chips and coconut oil together in 30-second intervals, stirring in between, until melted and smooth.
  4. Drizzle the melted chocolate over the rolled-out Mini Medjools layer.
  5. Sprinkle the top of the date bark with toppings of choice and with a pinch of sea salt for a salty-sweet contrast (optional).
  6. Place the baking dish in the freezer for at least 30 minutes, or until the chocolate is completely hardened.
  7. Remove the date bark from the freezer and cut it into squares or bars for serving. Store leftovers in an airtight container before serving.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
