Walnut Date Bark

Walnut Date Bark: A delectable blend of rich, nutty California Walnuts and sweet, chewy Natural Delights Coconut Mini Medjools nestled in smooth, indulgent chocolate.

Ingredients

  • 3 cups California Walnuts
  • 2 cups Coconut Mini Medjools, halved
  • 1 cup dark chocolate chips, melted
  • 2 tablespoons coconut oil
  • Flaky sea salt

Preparation

  1. Spread the chopped walnuts on a baking sheet lined with parchment paper.
  2. Layer the halved Coconut Mini Mejdools on top of the walnuts.
  3. In a microwave-safe bowl, heat the chocolate chips and coconut oil together in 30-second intervals, stirring in between, until melted and smooth.
  4. Drizzle the melted dark chocolate over the dates and walnuts.
  5. Sprinkle with sea salt flakes for a touch of salty sweetness.
  6. Refrigerate for 15-20 minutes, then break apart and serve.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
